What is one of the healthiest snacks for the Holidays?...homemade beef jerky. This is one of the tastiest batches I have made so far…give it a try! Eight pounds of round makes about 2.5 pounds of jerky…mmmmm mmmmm.

Herky Beef Jerky

Meat

3-4 lbs Eye of Round


Marinade

1 Cup Soy Sauce

1 Cup Worcestershire Sauce

1 Tablespoon Garlic Powder

1 Tablespoon Liquid Smoke

1 Tablespoon Onion Powder

2 Teaspoons Sesame Seed Oil

1 Light Beer

2 VERY large pinches of Kosher salt


Directions

Slice the eye of round into thin slices along the grain or in other words with the grain. Add all of the above ingredients into large bowl, cover, and marinate in the refrigerator for 12-24 hours…the longer the better!

Toss into dehydrator until at desired texture…about 6 hours. After 3 hours check texture of each piece at regular intervals ( 1 to 1.5 hours) and pull individual pieces off as they are done.
