Monte Christo Spam Sandwich

Ingredients

1 can of Spam

4 thick slices of bread

¼ cup Dijon Mustard

Hamburger Pickles

Swiss cheese

3 Eggs

Unsalted butter

Cayenne (to taste)

1 cup mayonnaise

1/3 cup honey

1 teaspoon Herbes de Provence

Black Peppa to taste

Sandwich directions

Slice Spam into desired thickness. Now, fry spam until at desired doneness…for me that will be until I have a nice brownness on both sides.

Make sandwich by layering Dijon mustard, cheese, spam, pickles, and cheese.

Dredge directions

Add 3 cracked eggs into a bowl large enough to drop in sandwich. Mix with Herbes de provence, salt..not much, peppa, and cayenne as appropriate. Dredge sandwich on all sides and fry in butter/oil on medium heat until done to desired color and melty.

Make honey mustard dipping sauce

1 cup mayo

½ cup honey

Dijon mustard to taste

Mix and enjoy as dipping sauce
