Stuffed Smoked Cabbage

1 lb 80/20 ground beef

1 lb sausage

2 large cabbages

2 chopped bell peppers

1 large chopped onion

3 chopped Jalapenos

2 eggs

2 Diced fresh tomatoes (garnish)

¼ cup chopped chives/green onions (garnish)

½ cup chopped fresh cilantro (garnish)

2 tablespoons goat cheese crumbles (garnish)

3 large bulbs roasted garlic

2 cups fresh or thawed frozen corn


½ Tablespoon Cayenne pepper

½ Tablespoon smoked Paprika

½ Tablespoon garlic powder

Salt and pepper to taste


Directions

Brown sausage and ground beef. Salt and pepper ground beef to taste. Drain and let cool enough to handle. Combine beef, sausage, eggs, bell peppers, onion, Jalapenos, roasted garlic, corn, cayenne pepper, paprika, and garlic powder into large bowl and mix together completely.

Next, core and hollow out the cabbage.

Pack hollowed cabbage with meat and sausage mixture. Place on grill at 350 degrees F until cabbage is at your desired texture…me? That’s gonna be soft!


Makes 2 to 3 heads of cabbage
